Ingredients
  

  • 12 large mushrooms stems removed
  • 2 cups fresh spinach chopped
  • 1/2 cup artichoke hearts drained and chopped
  • 4 oz cream cheese softened
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste
  • 1 clove garlic minced (optional)
  • Olive oil for sautéing

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the spinach and garlic in olive oil until wilted. Drain excess moisture.
  3. Mix spinach, artichokes, cream cheese, and parmesan.
  4. Stuff mushroom caps with the mixture.
  5. Arrange mushrooms on a baking sheet and bake for 20-25 minutes until filling is golden and bubbly.
  6. Garnish with extra parmesan if desired and serve warm.

Notes

This dish can also be made in advance and reheated for gatherings or parties.
