Ingredients
  

For the Tacos:
  • 4 large Portabella mushrooms cleaned and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • ½ teaspoon garlic powder
For the Salsa:
  • 2 medium tomatoes finely diced
  • 1 small red onion finely chopped
  • 1 jalapeño minced
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro chopped
  • Salt to taste
Toppings:
  • Sliced avocado
  • Shredded lettuce
  • Crumbled queso fresco or feta optional
  • Lime wedges
For Serving:
  • 8 small corn or flour tortillas

Method
 

Prepare the Mushrooms:
  1. In a large bowl, mix olive oil, smoked paprika, cumin, chili powder, garlic powder, soy sauce, salt, and pepper.
  2. Add sliced Portabella mushrooms and toss to coat evenly. Let marinate for 10 minutes.
Cook the Mushrooms:
  1. Heat a skillet over medium-high heat. Add the mushrooms and cook for 5–7 minutes, stirring occasionally, until tender and slightly caramelized.
Make the Salsa:
  1. Combine diced tomatoes, red onion, jalapeño, lime juice, cilantro, and salt in a bowl. Mix well and set aside.
Assemble the Tacos:
  1. Warm tortillas in a skillet or microwave. Layer cooked mushrooms, fresh salsa, avocado slices, and shredded lettuce. Sprinkle queso fresco if using.
Serve:
  1. Serve immediately with lime wedges on the side for an extra citrus kick.
