Prepare the Mushrooms:

- Add sliced Portabella mushrooms and toss to coat evenly. Let marinate for 10 minutes.

Make the Salsa:
- Combine diced tomatoes, red onion, jalapeño, lime juice, cilantro, and salt in a bowl. Mix well and set aside.
Assemble the Tacos:
- Warm tortillas in a skillet or microwave. Layer cooked mushrooms, fresh salsa, avocado slices, and shredded lettuce. Sprinkle queso fresco if using.
Serve:
- Serve immediately with lime wedges on the side for an extra citrus kick.
