Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 1 lb 450g mushrooms (sliced)
  • 1 cup BBQ sauce
  • 2 tbsp olive oil for sautéing
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp garlic powder
  • Fresh herbs optional, for garnish

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper.
  2. Add the chicken breasts to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from heat and slice the chicken into strips.
  3. In the same skillet, add the sliced mushrooms and cook for 5-7 minutes until tender and browned. Season with a pinch of salt and pepper.
  4. Add the BBQ sauce to the mushrooms and stir to combine. Add the sliced chicken back into the pan and toss everything together, making sure the chicken is coated with the sauce.
  5. Let everything simmer together for another 5 minutes, allowing the flavors to meld.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

  • If you prefer a deeper smoky flavor, try using a smoked BBQ sauce or adding liquid smoke to the sauce.
  • For a quicker version, consider grilling the chicken instead of pan-searing it.
