Method
- Preheat your oven to 400°F (200°C).
- Toss sliced mushrooms in olive oil, salt, and pepper. Spread them evenly on a baking sheet.
- Roast for 15-20 minutes until golden and tender.
- While the mushrooms are roasting, slice the avocado, tomato, and cucumber.
- Once the mushrooms are done, spread hummus on each wrap.
- Layer the roasted mushrooms, avocado slices, tomato, cucumber, and fresh greens on the wraps.
- Roll up the wraps tightly, cut them in half, and serve immediately.
Notes
- For added protein, you can include chickpeas, tofu, or grilled chicken in the wrap.
- You can store leftovers in the fridge, but they are best enjoyed fresh.
