Ingredients
  

  • 4 large Portabella mushrooms cleaned and stems removed
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 slider buns
  • 2 tablespoons butter for toasting buns
  • Fresh spinach leaves optional
  • 1/2 cup mayonnaise
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

  1. In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper. Place the mushrooms in the mixture, ensuring they’re fully coated. Let them marinate for at least 30 minutes.
  2. Prepare the garlic aioli by combining mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper in a bowl. Stir until smooth.
  3. Heat the grill or a grill pan to medium-high heat. Grill the mushrooms for about 5-7 minutes per side until tender and juicy.
  4. While the mushrooms are grilling, butter the buns and toast them until golden brown.
  5. Assemble the sliders by spreading a generous amount of garlic aioli on the buns, adding the grilled mushrooms, and topping with fresh spinach if desired.
  6. Serve immediately and enjoy!

Notes

  • Feel free to add your favorite toppings such as cheese, tomatoes, or pickles for added texture and flavor.
  • These sliders can easily be made vegan by substituting the mayonnaise with a plant-based option.
