Portabella Mushroom Pasta with Garlic and Herbs

Ingredients
  

  • 200 g 7 oz of fettuccine or your preferred pasta
  • 2 large Portabella mushrooms sliced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh thyme rosemary, or parsley for garnish
  • Salt and pepper to taste

Method
 

  1. Cook the pasta in salted boiling water according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil and butter over medium heat. Add the sliced mushrooms and cook until tender and golden brown, about 5-7 minutes.
  3. Add the minced garlic and cook for 1 more minute until fragrant.
  4. Pour in the cream, and stir to combine. Let it simmer for 2-3 minutes, then add salt and pepper to taste.
  5. Add the cooked pasta to the skillet and toss to coat in the creamy mushroom sauce. If needed, add reserved pasta water to achieve a smooth consistency.
  6. Serve with freshly grated Parmesan and garnish with herbs.

Notes

For an extra boost of flavor, consider adding a splash of white wine while cooking the mushrooms.
