Ingredients
  

  • 2 large Portabella mushrooms finely chopped
  • 1 can black beans drained and mashed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup breadcrumbs or oat flour for a gluten-free option
  • 1 tbsp soy sauce
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 tbsp fresh parsley chopped
  • Salt and pepper to taste
  • Olive oil for cooking
  • Burger buns and desired toppings lettuce, tomato, pickles, etc.

Method
 

  1. Heat olive oil in a pan over medium heat. Sauté the onions and garlic until softened, about 3-4 minutes.
  2. In a large mixing bowl, combine the chopped mushrooms, mashed black beans, sautéed onions and garlic, breadcrumbs, soy sauce, cumin, paprika, parsley, salt, and pepper.
  3. Mix thoroughly and form the mixture into 4 even patties.
  4. Heat olive oil in a skillet or grill pan over medium heat. Cook the patties for 4-5 minutes per side, until golden brown and firm.
  5. Toast the burger buns and assemble with your preferred toppings.

Notes

These burgers can also be baked at 375°F for about 20 minutes for a healthier option. Make sure the patties are firm enough to hold together while cooking; if needed, add extra breadcrumbs.
