Mushroom & Bell Pepper Veggie Burger

Ingredients
  

  • 1 cup finely chopped mushrooms
  • 1 cup finely chopped bell peppers any color
  • 1/2 cup breadcrumbs
  • 1/4 cup cooked quinoa or rice
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp soy sauce
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil for cooking

Method
 

  1. Heat olive oil in a pan over medium heat. Sauté the onions, garlic, mushrooms, and bell peppers until softened, about 5-7 minutes.
  2. Remove from heat and allow to cool slightly.
  3. In a bowl, combine the sautéed vegetables with breadcrumbs, quinoa, soy sauce, paprika, salt, and pepper. Mix well until the mixture holds together.
  4. Shape the mixture into 4 equal patties.
  5. Heat a non-stick pan over medium heat. Cook the patties for 4-5 minutes on each side, until golden brown and crisp.
  6. Serve on buns with your favorite toppings.

Notes

You can freeze the uncooked patties for up to 3 months. Simply cook them from frozen when needed.
