Ingredients

finely chopped mushrooms

finely chopped bell peppers
any color

breadcrumbs

cooked quinoa or rice

small onion
finely chopped

cloves
garlic
minced

soy sauce

tsp
smoked paprika

tsp

olive oil
for cooking
Instructions
Heat olive oil in a pan over medium heat. Sauté the onions, garlic, mushrooms, and bell peppers until softened, about 5-7 minutes.
Remove from heat and allow to cool slightly.
In a bowl, combine the sautéed vegetables with breadcrumbs, quinoa, soy sauce, paprika, salt, and pepper. Mix well until the mixture holds together.
Shape the mixture into 4 equal patties.
Heat a non-stick pan over medium heat. Cook the patties for 4-5 minutes on each side, until golden brown and crisp.
Serve on buns with your favorite toppings.
Notes
You can freeze the uncooked patties for up to 3 months. Simply cook them from frozen when needed.
