Mushroom and Broccoli Stir-Fry

Ingredients
  

  • 1 cup broccoli florets
  • 1 cup mushrooms sliced
  • 2 cloves garlic minced
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon fresh ginger grated
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • Salt and pepper to taste

Method
 

  1. Heat sesame oil and olive oil in a large pan or wok over medium-high heat.
  2. Add garlic and ginger and sauté for 30 seconds until fragrant.
  3. Add broccoli and stir-fry for 3-4 minutes.
  4. Add mushrooms and cook for an additional 4-5 minutes, stirring occasionally.
  5. Stir in soy sauce, water, and salt and pepper.
  6. Continue to cook for another 1-2 minutes until everything is coated in sauce and tender.
  7. Serve warm over rice or noodles.

Notes

  • For a gluten-free version, use tamari instead of soy sauce.
  • You can add any other veggies you have on hand, like bell peppers or carrots.
