Ingredients
  

  • 2 slices of bread sourdough or whole grain
  • 1 ripe avocado
  • 1 cup mushrooms button or cremini, sliced
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: Fresh herbs parsley, thyme, chili flakes, poached egg

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add the garlic and sauté for 1 minute, until fragrant.
  3. Add the sliced mushrooms, salt, and pepper, cooking for 5–7 minutes, stirring occasionally, until golden brown.
  4. While the mushrooms cook, toast the bread to your liking.
  5. Mash the avocado with lemon juice, salt, and pepper.
  6. Spread the mashed avocado on the toasted bread.
  7. Top with the sautéed mushrooms and optional toppings like fresh herbs or a poached egg.
  8. Serve immediately and enjoy!
