Ingredients
  

  • 4 bone-in skin-on chicken thighs
  • 2 cups mushrooms sliced
  • 3 garlic cloves minced
  • Juice of 2 lemons
  • 3 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix lemon juice, olive oil, garlic, thyme, paprika, salt, and pepper.
  3. Add chicken thighs, ensuring they’re well coated. Marinate for 30 minutes.
  4. Arrange mushrooms in a baking dish and pour chicken broth over them.
  5. Place marinated chicken on top of mushrooms. Drizzle remaining marinade over everything.
  6. Bake for 30-35 minutes or until chicken reaches 165°F (74°C).
  7. Garnish with fresh parsley before serving.

Notes

  • Substitute chicken thighs with breasts if preferred, adjusting the cooking time.
  • Use a meat thermometer to avoid overcooking.
