Instructions
Preheat oven to 375°F (190°C).
In a bowl, mix lemon juice, olive oil, garlic, thyme, paprika, salt, and pepper.
Add chicken thighs, ensuring they’re well coated. Marinate for 30 minutes.
Arrange mushrooms in a baking dish and pour chicken broth over them.
Place marinated chicken on top of mushrooms. Drizzle remaining marinade over everything.
Bake for 30-35 minutes or until chicken reaches 165°F (74°C).
Garnish with fresh parsley before serving.
Notes
Substitute chicken thighs with breasts if preferred, adjusting the cooking time.
Use a meat thermometer to avoid overcooking.
