Ingredients
  

  • 1 medium cauliflower riced
  • 1 cup fresh mushrooms sliced
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley optional, for garnish

Method
 

  1. Heat olive oil and butter in a large pan over medium heat.
  2. Add the garlic and mushrooms, sautéing until the mushrooms soften, about 5 minutes.
  3. Stir in the cauliflower rice and cook for 5-7 minutes, stirring occasionally.
  4. Season with salt and pepper, and cook until the cauliflower rice is tender but not mushy.
  5. Garnish with fresh parsley and serve immediately.

Notes

  • You can substitute the cauliflower rice with frozen riced cauliflower for convenience, but fresh gives the best texture.
  • If you're looking for a more indulgent dish, add a sprinkle of Parmesan cheese at the end for extra flavor.
