Ingredients
  

  • 4 boneless skinless chicken thighs
  • 2 cups mushrooms sliced
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 3 cloves garlic minced
  • ½ cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Method
 

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken thighs on both sides until golden brown, about 3-4 minutes per side. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 1 minute until fragrant.
  4. Add mushrooms and cook until tender, about 5 minutes.
  5. Stir in honey, soy sauce, and chicken broth. Simmer for 2 minutes.
  6. Return chicken to the skillet and coat with the sauce. Simmer for 10-15 minutes until chicken is cooked through and sauce thickens.
  7. Garnish with parsley and serve hot.

Notes

  • Use low-sodium soy sauce if you prefer less salt.
  • Pair with jasmine rice or quinoa for a wholesome meal.
