Healthy Mushroom and Spinach Stir-Fry

Ingredients
  

  • 2 cups fresh spinach
  • 1 cup mushrooms sliced
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1 teaspoon fresh ginger grated
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds optional

Method
 

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic and ginger, sauté for 1-2 minutes until fragrant.
  3. Add mushrooms and stir-fry for 5-6 minutes until soft.
  4. Stir in spinach and cook for another 2 minutes until wilted.
  5. Drizzle with soy sauce and sesame oil, toss to coat.
  6. Sprinkle sesame seeds if desired and serve warm.

Notes

For a gluten-free version, use tamari instead of soy sauce.
