Method
- Heat olive oil in a large pan over medium heat.
- Add garlic and ginger, sauté for 1-2 minutes until fragrant.
- Add mushrooms and stir-fry for 5-6 minutes until soft.
- Stir in spinach and cook for another 2 minutes until wilted.
- Drizzle with soy sauce and sesame oil, toss to coat.
- Sprinkle sesame seeds if desired and serve warm.
Notes
For a gluten-free version, use tamari instead of soy sauce.
