Ingredients

  • 4 large Portobello mushroom caps
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 garlic cloves minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley optional, for garnish

Method

  1. Clean the mushroom caps by gently wiping them with a damp cloth. Remove stems.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, garlic, oregano, salt, and pepper.
  3. Place mushrooms in a shallow dish and pour marinade over them. Let them marinate for at least 30 minutes.
  4. Preheat the grill to medium heat.
  5. Grill the mushrooms, gill-side down, for about 7 minutes per side, until tender and charred.
  6. Serve with a garnish of fresh parsley if desired.

Notes

  • For an extra kick, add red pepper flakes to the marinade.
  • Can be served as a substitute for meat in burgers or alongside grilled vegetables.
