Ingredients
  

  • 4 large portabella mushrooms stems removed
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 garlic cloves minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 avocado sliced
  • 4 burger buns toasted
  • Lettuce leaves
  • Sliced tomato
  • Optional: Cheese or vegan cheese

Method
 

  1. Marinate Mushrooms: In a bowl, whisk olive oil, balsamic vinegar, garlic, paprika, salt, and pepper. Brush this mixture onto both sides of the mushrooms. Let them marinate for 20 minutes.
  2. Preheat Grill: Heat your grill or grill pan to medium-high.
  3. Grill Mushrooms: Place mushrooms on the grill, gill side down. Cook for 4-5 minutes per side, until tender and lightly charred.
  4. Prepare Buns and Toppings: Toast burger buns on the grill for 1-2 minutes. Layer lettuce, tomato, grilled mushrooms, and avocado slices on each bun.
  5. Assemble and Serve: Add optional cheese and secure the top bun. Serve immediately with your favorite sides.
