Grilled Mushrooms with Soy Ginger Marinade

Ingredients
  

  • 2 cups mushrooms portobello or cremini
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp grated fresh ginger
  • 1 tbsp garlic minced
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tbsp water
  • 1 tsp toasted sesame seeds optional
  • Fresh cilantro for garnish, optional

Method
 

  1. Clean mushrooms and remove stems if needed. Slice large mushrooms into thick slices.
  2. In a bowl, combine soy sauce, sesame oil, ginger, garlic, rice vinegar, brown sugar, and water. Stir until the sugar dissolves.
  3. Place mushrooms in the marinade, ensuring they are fully coated. Cover and refrigerate for 1-2 hours.
  4. Preheat grill to medium-high heat.
  5. Place marinated mushrooms on the grill and cook for 4-5 minutes per side, until tender and slightly charred.
  6. Garnish with toasted sesame seeds and fresh cilantro if desired.
  7. Serve immediately with your favorite dish.

Notes

For extra crispy edges, use a grill basket or foil to prevent the mushrooms from falling through the grates
