Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups mixed mushrooms sliced
  • 3 tbsp butter
  • 2 garlic cloves minced
  • 1 tsp fresh thyme leaves
  • Optional: 2 tbsp white wine
  • Chopped parsley for garnish

Method
 

  1. Marinate the Chicken: Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. Let rest for 10 minutes.
  2. Grill the Chicken: Preheat the grill to medium-high. Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (74°C). Remove and let rest.
  3. Prepare the Mushroom Medley: Melt butter in a pan over medium heat. Add garlic and cook until fragrant. Stir in mushrooms, thyme, and salt. Sauté for 5-7 minutes. Add white wine, if using, and cook until reduced.
  4. Assemble: Top grilled chicken with the mushroom medley. Garnish with parsley and serve hot.

  • Substitute chicken with tofu or portobello mushrooms for a vegetarian option.
