Ingredients
  

  • 200 g button mushrooms cleaned and halved
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ cup cold water adjust as needed
  • 2 cups vegetable oil for frying
  • ½ cup sweet chili sauce store-bought or homemade
  • 1 tsp sesame seeds optional, for garnish
  • Fresh cilantro leaves optional, for garnish

Method
 

  1. Prepare the Batter: In a mixing bowl, combine flour, cornstarch, baking powder, garlic powder, paprika, and salt. Gradually add cold water while whisking until the batter is smooth and slightly thick.
  2. Heat the Oil: In a deep skillet or pot, heat vegetable oil over medium heat until it reaches 350°F (175°C).
  3. Coat the Mushrooms: Pat the mushrooms dry, then dip them into the batter, ensuring they are evenly coated.
  4. Fry the Mushrooms: Carefully place the battered mushrooms in the hot oil in small batches. Fry for 2-3 minutes or until golden and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
  5. Serve: Arrange the fried mushrooms on a platter. Drizzle with sweet chili sauce or serve the sauce on the side for dipping. Garnish with sesame seeds and fresh cilantro if desired.

  • For a gluten-free option, substitute the all-purpose flour with rice flour.
  • Serve immediately for the best crispiness.
