Instructions
Prepare the Mushrooms:
Clean mushrooms with a damp paper towel.
Gently remove stems and set caps aside. Finely chop the stems for the filling.
Make the Filling:
In a bowl, mix cream cheese, cheddar cheese, chopped stems, parsley, garlic powder, paprika, salt, and pepper. Combine until smooth.
Stuff the Mushrooms:
Spoon or pipe the filling into each mushroom cap, mounding slightly.
Coat the Mushrooms:
Set up a breading station with flour, beaten eggs, and panko breadcrumbs in separate bowls.
Coat each stuffed mushroom in flour, dip in egg, then roll in breadcrumbs, pressing gently to adhere.
Fry the Mushrooms:
Heat vegetable oil in a deep skillet to 350°F (175°C).
Fry mushrooms in batches, 2-3 minutes per side, until golden and crispy.
Drain on paper towels.
Serve:
Serve hot with a dipping sauce of your choice, like garlic aioli or marinara.
Notes
For a healthier version, bake mushrooms at 400°F (200°C) for 15-20 minutes until crispy.
Double the ingredients for larger gatherings.
