Prepare the Mushrooms:
- Clean mushrooms with a damp paper towel.
- Gently remove stems and set caps aside. Finely chop the stems for the filling.
Make the Filling:
- In a bowl, mix cream cheese, cheddar cheese, chopped stems, parsley, garlic powder, paprika, salt, and pepper. Combine until smooth.
Stuff the Mushrooms:
- Spoon or pipe the filling into each mushroom cap, mounding slightly.
Coat the Mushrooms:
- Set up a breading station with flour, beaten eggs, and panko breadcrumbs in separate bowls.
- Coat each stuffed mushroom in flour, dip in egg, then roll in breadcrumbs, pressing gently to adhere.
Fry the Mushrooms:
- Heat vegetable oil in a deep skillet to 350°F (175°C).
- Fry mushrooms in batches, 2-3 minutes per side, until golden and crispy.
- Drain on paper towels.
Serve:
- Serve hot with a dipping sauce of your choice, like garlic aioli or marinara.
