Ingredients

For the Mushrooms:
  • 200 g button or cremini mushrooms cleaned and trimmed
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying
For the Garlic Aioli:
  • 1/2 cup mayonnaise
  • 2 garlic cloves minced
  • 1 tsp lemon juice
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste

Method

Step 1: Prepare the Mushrooms
  1. Gently pat the mushrooms dry after washing to remove excess moisture.
  2. In a bowl, mix flour, paprika, garlic powder, salt, and pepper.
  3. Set up a breading station: one bowl for the flour mix, one for beaten eggs, and another for panko breadcrumbs.
Step 2: Bread the Mushrooms
  1. Roll each mushroom in the flour mixture, shaking off excess.
  2. Dip into the beaten eggs, ensuring even coating.
  3. Press into panko breadcrumbs, making sure the mushrooms are fully covered.
Step 3: Fry to Perfection
  1. Heat vegetable oil in a deep pan over medium heat (about 350°F/175°C).
  2. Fry mushrooms in batches for 2-3 minutes or until golden brown.
  3. Transfer to a wire rack to drain and cool slightly.
Step 4: Make the Garlic Aioli
  1. In a small bowl, mix mayonnaise, minced garlic, lemon juice, and Dijon mustard.
  2. Season with salt and pepper to taste.
Step 5: Serve and Enjoy
  1. Plate the crispy fried mushrooms alongside a bowl of garlic aioli for dipping. Garnish with fresh parsley if desired.

Notes

  • For a healthier twist, try air-frying the mushrooms at 375°F (190°C) for 12-15 minutes.
  • Substitute vegan mayo for a plant-based option.
