Ingredients
  

  • 4 boneless skinless chicken breasts (thinly sliced or pounded)
  • 2 cups sliced mushrooms
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 2 large eggs beaten
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil optional, for garnish

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken with salt, pepper, garlic powder, and oregano.
  3. Dip each piece in beaten egg, then coat with breadcrumbs.
  4. Heat olive oil in a large skillet over medium heat. Sear chicken for 2-3 minutes per side until golden.
  5. Remove chicken and sauté mushrooms in the same skillet until tender.
  6. In a baking dish, layer marinara sauce, chicken, mushrooms, and cheeses.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
  8. Let rest for 5 minutes before serving. Garnish with basil if desired.

Notes

  • Gluten-free breadcrumbs can be used as a substitute.
  • Add a splash of cream to the sauce for extra richness.
  • For a vegetarian option, substitute chicken with breaded eggplant slices.
