Cauliflower and Mushroom Mashed Potatoes

Ingredients
  

  • 1 medium cauliflower cut into florets
  • 1 lb potatoes peeled and cubed
  • 1 cup mushrooms sliced
  • 3 cloves garlic minced
  • 2 tbsp olive oil or butter
  • 1/4 cup milk or plant-based milk
  • Salt and pepper to taste
  • Fresh parsley optional

Method
 

  1. Boil the potatoes and cauliflower in salted water until tender, about 15 minutes.
  2. While they cook, heat olive oil in a pan and sauté mushrooms and garlic until golden and fragrant, about 7 minutes.
  3. Drain potatoes and cauliflower, then mash them together until smooth.
  4. Stir in milk, butter, sautéed mushrooms, and garlic.
  5. Season with salt and pepper to taste.
  6. Garnish with parsley and serve warm.

Notes

  • For extra richness, stir in sour cream or cream cheese.
  • If you want a smoother mash, use a hand blender for a silky consistency.
