Cajun-Style Stuffed Mushrooms

Ingredients
  

  • 12 large mushrooms stems removed
  • 200 g sausage andouille or pork
  • 100 g cream cheese softened
  • 50 g shredded cheddar cheese
  • 2 tablespoons breadcrumbs optional
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon garlic powder
  • 1 tablespoon finely chopped green onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat the olive oil over medium heat and cook the sausage until browned, breaking it into small pieces.
  3. Add garlic powder, Cajun seasoning, salt, and pepper, and cook for another 2 minutes.
  4. In a bowl, mix the cooked sausage with cream cheese, shredded cheddar, green onions, and breadcrumbs.
  5. Stuff the mushroom caps with the mixture, pressing gently to pack them in.
  6. Place the stuffed mushrooms on a baking sheet and bake for 15-20 minutes until golden and bubbly.
  7. Serve warm, garnished with additional green onions if desired.

Notes

Feel free to adjust the spice level by adding more or less Cajun seasoning. These can also be made ahead and stored in the fridge before baking.
