Prep Mushrooms: Slice the mushrooms into halves or quarters depending on size. Set aside.
Make the Breading: In a shallow bowl, combine the flour, breadcrumbs, Cajun seasoning, paprika, garlic powder, black pepper, and salt.
Dipping Station: Set up a dipping station: one bowl with buttermilk and another with beaten eggs.
Coat Mushrooms: Dip each mushroom into the buttermilk, then coat with the breadcrumb mixture, pressing gently for a thick, even coating.
Heat Oil: In a deep skillet or pan, heat oil over medium-high heat. Once hot, carefully add the mushrooms in batches, frying for 3-4 minutes or until golden brown.
Make Garlic Sauce: While frying, combine mayonnaise, sour cream, minced garlic, lemon juice, salt, and pepper in a bowl. Stir well.
Drain & Serve: Once the mushrooms are fried, place them on a paper towel-lined plate to drain excess oil. Serve with the garlic dipping sauce.
Notes
For a lighter version, you can bake the mushrooms at 400°F for about 20 minutes.
