Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 cups sliced mushrooms
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, garlic powder, and thyme.
  3. Heat olive oil in a skillet over medium heat, sear the chicken for 2 minutes per side, then transfer to a baking dish.
  4. In the same skillet, sauté mushrooms until softened.
  5. Pour heavy cream over the chicken, add mushrooms, and top with mozzarella and Parmesan cheese.
  6. Bake for 30-35 minutes until chicken is cooked through and cheese is golden and bubbly.
  7. Let rest for 5 minutes before serving.

This dish pairs beautifully with garlic mashed potatoes or roasted vegetables.
