Ingredients
  

  • 2 large Portabella mushrooms finely chopped
  • 1 can black beans drained and mashed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • ½ cup breadcrumbs or oat flour for a gluten-free option
  • 1 tbsp soy sauce
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • 1 tbsp fresh parsley chopped
  • Salt and pepper to taste
  • Olive oil for cooking
  • Burger buns and desired toppings lettuce, tomato, pickles, etc.

Instructions
 

  • Heat olive oil in a pan over medium heat. Sauté the onions and garlic until softened, about 3-4 minutes.
  • In a large mixing bowl, combine the chopped mushrooms, mashed black beans, sautéed onions and garlic, breadcrumbs, soy sauce, cumin, paprika, parsley, salt, and pepper.
  • Mix thoroughly and form the mixture into 4 even patties.
  • Heat olive oil in a skillet or grill pan over medium heat. Cook the patties for 4-5 minutes per side, until golden brown and firm.
  • Toast the burger buns and assemble with your preferred toppings.

Notes

These burgers can also be baked at 375°F for about 20 minutes for a healthier option. Make sure the patties are firm enough to hold together while cooking; if needed, add extra breadcrumbs.
