Ingredients
  

  • 12 large mushroom caps
  • 1 cup cooked chicken shredded
  • 2 tbsp buffalo sauce adjust to taste
  • ½ cup cream cheese softened
  • ¼ cup shredded cheddar cheese
  • 1 tbsp ranch dressing
  • 1 tbsp green onions chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Remove the stems from the mushrooms and carefully scoop out some of the insides to create space for the filling.
  3. In a bowl, mix the shredded chicken, buffalo sauce, cream cheese, cheddar cheese, ranch dressing, green onions, and a pinch of salt and pepper.
  4. Spoon the chicken mixture into each mushroom cap, pressing gently to pack it in.
  5. Arrange the stuffed mushrooms on a baking sheet and drizzle with olive oil.
  6. Bake for 15-20 minutes, or until the mushrooms are tender and the filling is bubbly.
  7. Serve warm, garnished with additional green onions or ranch for dipping.

Notes

  • If you prefer a milder version, replace buffalo sauce with barbecue sauce.
