Ingredients

  • 500 g fresh button mushrooms cleaned and stems removed
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 1 large egg
  • 1 cup buttermilk
  • 2 cups vegetable oil for frying
For the Herb Dipping Sauce:
  • 1/2 cup sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp fresh dill chopped
  • 1 tbsp fresh parsley chopped
  • 1 tsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Method

  1. Prepare the batter: In a shallow bowl, combine flour, cornmeal, garlic powder, salt, pepper, and paprika. In another bowl, whisk together the egg and buttermilk.
  2. Coat the mushrooms: Dip each mushroom into the egg mixture, then dredge it in the flour mixture, ensuring it's well coated.
  3. Fry the mushrooms: Heat vegetable oil in a large skillet over medium-high heat. Fry the mushrooms in batches for about 3-4 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  4. Make the herb dipping sauce: In a small bowl, combine sour cream, mayonnaise, dill, parsley, lemon juice, garlic powder, salt, and pepper. Stir well to combine.
  5. Serve: Arrange the fried mushrooms on a platter with the herb dipping sauce on the side for dipping.

Notes

  • You can add a pinch of cayenne pepper to the batter for a spicy kick.
  • If you prefer, you can bake the mushrooms instead of frying them by placing them on a baking sheet at 400°F (200°C) for 15-20 minutes, flipping halfway through.
